The fresh brews, crafted by resident brewmaster Gabriel Garcia, are made from certified organic malts and hops varieties. A standout among the diversity of offerings, ranging from the signature Czech pilsner to Irish stouts, is the Brut Beer. Inspired by their official ambassadorship with Barons de Rothschild, it’s made with Méthode Traditionnelle, the same process used to craft Champagne. Their culinary game is just as elevated, with indulgent plates like Westholme Wagyu and freshly shucked oysters dressed in Brut Beer jelly, ponzu and Yarra Valley roe.
